Chicken Sitti

This is originally Sitti's recipe, yes the Bossa Nova singer. After watching her guesting stint at Spoon (net-25 cooking show hosted by Janice) i got interested with her recipe. The difference with my version is that I added more herbs and made Star Anis my obedient ingredient.

Deep fry whole chicken. Once chicken is golden brown, drain excess oil then put in a big plate. In a wok, saute 6 tomatoes and 4 onions. Sprinkle with black pepper, salt and vetsin. Then add 3 tbs of vinegar, 5 tbs of soy sauce, 10 star anis, 3 laurel leaf, 1 tbs of sugar. Add a cup of water then simmer for 5 minutes. After that pour the mixture to the chicken. enjoy!

Instead of serving fish and vegetables this holyweek , why don't u surprise your family and loved ones with your own sardinas!

Prepare 1kilo galunggong (make sure it is clean, remove bituks, heads and tails cut off), 500ml tomato sauce,1 cup of water, 3/4cup of oil (vegetable oil will do pero mas ok pag olive oil), 3tsp of salt, 2 tbs vinegar, 5pcs of pickles (sliced), 5 siling labuyo crushed (remove seeds), 2 carrots (sliced), 3 laurel leaves, 1 tsp of black pepper, 1 tsp of vetsin for the umami taste. Place all the ingredients in a pressure cooker.Make sure that you arrange the fish in rows. Cook for an hour in a moderate heat.Happy eating!

Ginataang Alimango with Sitaw

After a long silence, Im back. Done with checking exams, preparing notes and editing papers i finally have time updating my blog. "Gata" is famous among bicolano dishes. Aside from its spicy and hot flavor, the presence of "gata" distinguishes bicol dishes from other pinoy foodie. Here's my first "gata" menu - Ginataang alimango wid Sitaw..

Saute garlic, ginger and onions. Add the alimango.Season with shrimp paste (locally termed as "balaw" or "dinilan") and pepper. Add a cup of water then simmer for 10 minutes or until crab changes to orange color. Then add sitaw. When it is tender, add a mug of "kakang gata". Simmer for 5 minutes or until its creamy. Add some sili.
