Homemade Empanada from Cathy

It is my pleasure to post one of my friends' recipe-Homemade empanada! Looks pa lang yummy na. Catherine Silva-Parayno is my schoolmate in Colegio de Sta. Isabel.Spending more than 10 years in that school made us (classmates and batchmates) just like sisters.Thank you cathy for sharing your recipe, i hope it is okey with you (haven't asked her permission yet, hehe) if I share it on my food blog. Filling: 1 1/2 lb boneless chicken breast, cut into cubes 1 piece medium-sized onion, minced 1 tbsp garlic, minced 1 cup potato, diced 1 cup carrot, diced 1 cup green peas 1/4 cup raisins 1/2 tsp salt 1/2 tsp ground black pepper 1 tsp sugar 1/2 piece chicken cube 2 tbsp cooking oil Crust: 3 cups flour 4 tbsp sugar 6 tbsp water, cold 1 piece raw egg 1 cup butter, cold 1/2 tsp baking powder 1/2 tsp salt Cooking Procedure To cook the Filing 1 In a heated pan, pour the cooking oil and allow to heat-up 2 Saute the garlic and onions 3 Add the chicken breast then cook until color turns light brown (about 5 minutes) 4 Add water and chicken cube then simmer for 10 minutes 5 Put-in carrots and potatoes and simmer for 5 minutes 6 Add the green peas, raisins, and sugar then simmer for another 5 minutes 7 Sprinkle salt and pepper. Turn off the heat, drain the excess liquid, and set aside. To make the dough: 1 In a mixing bowl, combine the dry ingredients starting from the flour, sugar, baking powder, and salt then mix well. 2 Cut the butter into small thin pieces place in the mixing bowl with the dry ingredients.(the butter should be cold and solid before doing this) 3 Add water gradually and mix all the ingredients thoroughly until a dough is formed. You may use a pastry blender to make the dough. 4 Divide the dough into individual pieces by grabbing a piece from the whole mixture and rolling it in your hand until a spherical shape is formed. Do this until all the dough is consumed. Set aside in a cool place for at least 20 minutes 5 Flatten the spherical dough py pressing it with your palm against a flat surface. Use a rolling pin to flatten it fully while creating a round shape. To make the empanadas: 1. Place some filling at the middle of the flattened dough. Fold the dough so that opposite ends meet (you should have formed a half moon shaped dough)then press the edges and seal. (refer to the video for the technique) 2. After all the fillings are consumed, crack the egg and separate the white from the yolk. Beat the egg white lightly and mix a little water.Glaze the crust by brushing the egg wash. 3. Put a wax paper on top of a baking tray or grease the baking tray then arranged the sealed doughs. 4. Pre-heat oven at 400 degrees Fahrenheit for 10 minutes. Bake the sealed doughs for 25 minutes at the same temperature. 5. Remove from the oven.

Ginataang Langka with Daing na Tabangongo

Prepare half kilo of sliced langka, 3 cups of coco milk and a cup of 'kakang gata'. Saute garlic, onions and ginger. Add diced pork (liempo)and knorr pork cube. Simmer for 5 minutes. Add 3 cups of coco milk. Let it boil. Add the langka, daing and 3 long sili. Let it simmer until the 'langka' softens. Add a little sugar and vetsin. Then add the kakang gata. Season with salt (be moderate with this because the daing is already salty)

SamgYetang

The recipe is from the site: http://www.maangchi.com/recipe/samgyetang. Our former Dean in Aquinas Graduate School Dr. Pedro Bernaldez shared his talent in cooking and this is the outcome of his SAMGYETANG:




Ingredients:
Small chicken (Cornish hen), 1/4 cup of sweet rice, a dozen cloves of garlic, green onions, a few jujubes, and 1 or 2 small ginseng roots.

Wash and rinse your chicken in cold running water.
Soak 1/4 cup of sweet rice for 1 hour.
Stuff the chicken with the sweet rice, a ginseng root, a few jujubes, and 3-4 cloves of garlic. Place it in a pot.
Pour water into the pot and boil it over high heat for 20 minutes. When it starts boiling, skim off any foam and fat that rises to the surface Then pour in more water and boil it over medium heat for 40 minutes.
When it cooks properly, the chicken will be easily pulled apart by chopsticks.
Serve it with salt and pepper and kimchi or kaktugi.

Moroccan Meatballs



this recipe is from JENNY BEAN (Jenny Michelle Tuason Bulaong), looks good, im sure it tastes even better!

Ground beef into balls add salt an pepper to taste. Sautée garlic onion and capsicum add the meatballs. Add coco cream and curry powder paste. Simmer for 25mins until meat is cooked. Add black sesame seed, a bit of lemon and salt and pepper to taste.

Pahabol: You can use sour cream sauce as an alternative if you're not fond of coconut cream/milk. But use water first until meat is cooked and add the sour cream later. Make sure don't over cook the cream as it will taste a bit bitter.

Ginataang TKO na may Hipon


TKO stands for Talong, Kalabasa and Okra! this is for people who loves food with 'gata'(coconut milk).Set aside 2 cups of kakang gata. Saute onions, garlic and lotsa ginger. Add shrimps. Season with pepper and salt. Then add the kalabasa, pour a cup of kakang gata. Let it boil. Then add the talong, okra and siling mahaba. Also pour the remaining coconut milk. Let it boil. Season it with fish sauce and vetsin.

Gulay na Laing/Natong




A new found friends (thank you so much MR & MRS RANDY ASIADO) share their recipe of GULAY NA LAING!

Ingredients: dried gabi leaves, gata, pork small chops, bagoong shrimp, onion, garlic, ginger chunks, salt, pepper and sili

Procedure:
(a) tantyahin ang dami ng niyog na gagawing gata depende sa dami ng lulutuin
(b) ilagay ang gata sa kawali kasama na rin ang onion, garlic, pork at haluin hanggang kumulo
(c) pag kumulo na, timplahan na ng asin, pepper at bagoong
(d) pakuluin habang hinahalo hanggang maluto ang pork
(e) pag luto na pork, ilagay ang dried gabi leaves, dahan dahang ihalo para ma-distribute ang ingredients sa gulay
(f) hayaan maluto ng mga 20 mins
(g) ilagay na ang sili at haluin ng konti at hayaan hanggang matuyo ang sabaw

TIPS: hindi maganda na masyadong hinahalo ang gulay kc baka kumati at saka hindi rin masarap kung masabaw.

Sweet and Sour Fish





Here’s a lutong bahay you will surely enjoy..

Fry fish then set aside.

Saute garlic, lotsa onions and ginger. Add a cup of water, then add 2 tbsp of soy sauce, a tsp of sugar, a tbsp of vinegar, salt. Dissolve a tbsp of flour in a ¼ cup water then add this to the sauce. Add carrots and bell pepper (cut in strips), then simmer. Pour sauce over the fried fish.

Irah King's Adobo sa Bawang



This is one of my best buddies' (Elvira Malveda) knock-out pork recipe.

2 KLS PORK BELLY ( CUBES OR SLICE)
5 GLOVES GARLIC ( MINCED )
1 TBSP ROCK SALT
1/2 TSP BETSIN (OPTIONAL) OR 1 TBSP WHITE SUGAR(ALTERNATIVE)
1 TBSP BLACK PEPPER (ROUND) NOT "durog" yung BUO...
1/2 LITER OF WATER
1 TBSP OLIVE OIL

PROCEDURE:

1.)MIX PORK BELLY, 5 GLOVES, 1 TBSP ROCK SALT, 1/2 TBS BETSIN, 1 TBSP BLACK PEPPER (MARINATE FOR 15MINS).
2.) HEAT THE COOKING PAN...POUR 1 TBSP OF OLIVE OIL
3.) PUT ALL THE MARINATED INGREDIENTS, SAUTEE FOR 5 MINUTES
4.) ADD 1/2 LITER OF WATER, LET IT SIMMER.
NOTE : TASTE & ADD SALT IF NEEDED...OR ACCORDING TO TASTE BUDS.
5.) BOIL THE MARINATED INGREDIENTS, UNTIL THE WATER DRY & BECOMES OILY.

My Yummy Igado





every weekend i coof different dishes and marinate meats for our packed lunch for the schooldays. after marinating my chicken and spareribs i prepared for my next dish - IGADO.

all ingredients are cut in strips: pork meat, liver, potatoes, carrots and bell pepper

saute garlic and lotsa onions with 1/2 kilo pork . season with salt, black pepper and soy sauce.pour 2 cups of water. simmer for 20 minutes. then put 1/4 liver with potatoes . simmer for 10 minutes only. then put carrots and bell pepper. Add ajinomoto. Enjoy!

Got Sisig??? (pix from Brod Dex - recipe from Brod Boy..san ka pa?!)



Important ingredient: Pisngi ng Baboy (boil, then barbeque, then dice)
Mix chopped barbequed chicken liver. (2 pcs) mix well
In a pan, saute onions add pork mix then add more diced onions (3 bulbs) let simmer. Remove from the flame when onions are half cooked. Serve with soy sauce and calamansi juice. tara, inuman na!!!

Beef Bourguignon



Hi everyone. I am posting my sis Venus' modified recipe of Beef Bourguignon. The pix looks good,m sure it taste even better!

Above is the link of Ina Garten’s recipe which my sis adopted and modified. These are the changes she made: used chuck as it is a cheaper cut and easier to cook compared with fillet mignon. She omitted the cognac. Substituted the liquid with more low sodium beef stock. She suggested that the dish will be better with lightly toasted Sourdough with garlic rather than rice. Her kids enjoyed and loved it so much, Im sure you'll love it too!

Pork Cordon Bleu


This is my first attempt to make this dish. Thanks to ladysan bogs (Sheila Tretasco) who gave some helpful tips in making the dish extra special.

Pound pork fillet meat, sprinkle with salt and pepper.Top with a slice of sweet ham. Cut strips of cheese and place it on top edge of the ham (forming 3 layers -meat, ham and cheese). Then roll to enclose filling. Coat in a flour, dip in beaten egg with milk and roll in bread crumbs.In a pre-heated pan pour some vegetable oil.Deep fry until golden brown.

To prepare the white sauce: In the pan that you have just used, leave some small amount (about 3 tbsp) of oil. Dissolve 2 tbsp of flour. Pour half cup of milk and half-cup of water with dissolved half-chicken knorr cube. Simmer until you reach the desired consistency of the white sauce.

My daughter Ira loved it,and that was enough to prove myself that I have another knock-out foodie.

Chicken Schnitzel



Here is my version of the recipe. Cut chicken breast into thin steaks then pound, season it with maple syrup, salt and black pepper. Prepare 3 plates: 1- flour, 2- whisked egg with milk and 3- combine bread crumbs, grated cheese, rosemary and thyme. Prepare to fry. Heat pan and pour some oil. Do these three steps with the chicken breast : (1)coat with flour, (2)soak in egg then (3)coat with bread crumbs mixture.

White sauce: Dissolve 2tbs of flour in to the oil that you used for frying. Dissolve half cube of knorr chicken in a cup of water then pour it in. Let it simmer for 2 minutes then pour half cup of milk. Stir until you reach the desired consistency of the sauce.

Ginataang SKL!


Ginataang Saging, Kamote at Langka

After 6 busy months of schoolworks, mam yumi is back at her kicthen! Now I am preparing pinoy meryenda - ginataang saging (banana) with kamote and langka (jackfruit)
Cut all the ingredients (saging, kamote and langka) in serving pieces (pwedeng cubes). Bring to boil 3 mugs of kakang gata. Then put half cup sugar, saging and kamote. Pag okey na, add the langka, simmer for 5-10 minutes.Then put a cup of red tapioca (sago) for added aesthetic chuva! Enjoy your meryenda...

Beef Brocolli (Stir-fry)


Original recipe was given by my highschool friend cathy imperial-beringuela (tnx cath!). Some ingredients were modified.

Marinate half kilo tenderloin beef (cut in thin round-shape)with these: 1/3 cup oyster sauce, 1teaspoon sugar, 2 teaspoon hoisin sauce, teaspoon of soy sauce, a teaspoon of cornstarch and peanut oil. Marinate for at least 30m minutes.

Prepare your wok. Saute ginger and garlic in a vegetable oil. Let it sizzle in the oil for a minute to flavor the oil, then remove and discard.Toss the brocolli in the hot oil for 5 to 7 minutes, then set aside. Add more oil to your wok then add the marinated beef. Stir for 5 minutes. Add mushrooms and brocolli and stir with the beef for 3 minutes. Enjoy your stir-fry beef brocolli!

Yumi's Kare Kare



Boil 1kilo of pata (front leg preferred) for 30 minutes or until it is tender. Add 200g of Yummy/Lilys/Ludys peanut butter. Simmer until the sabaw is malapot. Put the veggies: puso ng saging, sitaw and talong.In a cup with hot water, extract the color of the aswete seeds then pour it in. Done. The recipe is indeed that simple.You just need to add some love to make it more flavorful. In a separate pan saute lots of garlic with Kamayan spicy bagoong.

Fettucine in White Cream Sauce



I always make sure that I spend my weekend with my loved ones. To make this extra special, I cook meryenda for them. This sunday I am preparing Fettucine in white cream sauce and pancake with choco syrup.Ira requested for fettucine and my pamankins for the choco pancakes. Wish granted!!!

FETTUCINE IN WHITE CREAM SAUCE
Cook fettucine pasta al dente then set aside. Cook Knorr cream in mushroom soup as instructed. Once done add salt, black pepper, mushrooms and chopped white onions. Let it simmer for 5 minutes. Add 250ml of nestle cream and chopped bell pepper. Again simmer for 5 minutes. Done.
Pour the sauce to your pasta. Top with bacon bits and grated cheese.

Pancit Tsalap!


Saute onions and garlic, add kikiam and squid balls (sliced into half),simmer for 5 minutes. Then add pork in strips. Add a cube of chicken. Pour 2 cups of water. Add soy sauce. Simmer for 10 minutes. Add the veggies: cabbage, carrots and baguio beans. Simmer for 5 minutes. Add vetsin for the umami taste. Then mix with pancit noodles.

Chicken Sitti


This is originally Sitti's recipe, yes the Bossa Nova singer. After watching her guesting stint at Spoon (net-25 cooking show hosted by Janice) i got interested with her recipe. The difference with my version is that I added more herbs and made Star Anis my obedient ingredient.

Deep fry whole chicken. Once chicken is golden brown, drain excess oil then put in a big plate. In a wok, saute 6 tomatoes and 4 onions. Sprinkle with black pepper, salt and vetsin.Then add 3 tbs of vinegar, 5 tbs of soy sauce, 10 star anis, 3 laurel leaf, 1 tbs of sugar. Add a cup of water then simmer for 5 minutes. After that pour the mixture to the chicken. enjoy!

Ira's Tacos




Ira was craving for some tacos since last week. It was only yesterday that i granted her wish. So off to supermarket on black saturday, bought ingredients for my daughter's meryenda.

Ira's Tacos .. Saute half kilo of ground pork with white onions (thinly sliced). Add beef cube and black pepper. Simmer for 10 minutes. Add 250ml of tomatoe sauce. Add salt. Let it simmer again for 5 minutes. Done. In a separate dish, chop/slice some tomatoes and cabbage.Grate cheese and put in a separate dish. Prepare your tacos by putting all the ingredients. Enjoy!
